Here is a great recipe to get the most out of your Meyer lemons (you don't want to waste a single bit of those precious gems!) This was sent in by a friend of mine....and it is one of those recipes that we have passed around again and again, so I don't know who to properly credit.....but if this is your original recipe, *thank you!* It is very good!

Candied Lemon Peel

This is a good way to use up lemon rind and it goes good with coffee or on cake. It really does taste like candy, and you can do this to ANY citrus fruit. Chop it up and put it in cookies, or just eat it by itself.

* 3 Meyer lemons
* 2 cups water
* 2 cups white sugar, or as needed


1. Cut lemons into slices, and remove the fruit pulp. Scrape off as much of the white inner layer as you can, this part is bitter. A spoon or butter knife will work well.

2. Bring water to a boil in a small pan, and add lemon peels. Boil for about 5 minutes, until tender. Remove peels from water, and stir in sugar. Return to a boil, add peels, and boil until transparent. Drain, and allow to dry before storing. Liquid may be reserved and used as lemon simple syrup.
